This is in the tradeskill revamp document, but it bears repeating. Previously I had stated that when LU24 hit live, it looked like all fungi and any of the food harvests that were removed from the harvesting tables would have a small cash value. This has now been changed. Critter bits (meat/fish) will act as substitutes in same-tier recipes as other critter bits. Everything else from the removed food harvests, and all the old fungi, will act in place of the appropriate tier of roots.

so, from what i've been reading.. im getting there will be use of roots in almost every recipe ..:confused: since they are making fungi a substitute for roots its more proof my assumptions are correct. Is there going to be an extreme demand for a certain harvestable ingrediant :) ?

If t7 is anything to go by, Roots will be in huge demand. All crafting classes use them by the bucketload.
