I'm a 20 monk and a 14 outfitter on the mistmoore server. I'm having a really hard time deciding where to go from here in my tradeskilling, so I thought I'd seek the advice of the experts (meaning anyone who's crossed the level 20 threshhold in this case).

I primarily tradeskill because I enjoy it and because its a decent way to make some money for the combat art upgrades I need. I went outfitter thinking to supplement my character a bit further with crafted armor and weapons. As a monk I can only use the stuff I craft with tailoring or weaponsmithing, but I just don't know what tailors can make and sell for profit. As an outfitter I've been making and selling interims needed by other classes, mostly iron sheets and spikes so far, but I just don't know what tailors make that's in demand for other classes. Personally I prefer making low profit margin items and selling in large quantities to making small quantities of finished goods and having them sit in my inventory for days at a time while I try to sell them at a profit.

Do tailors have goods that fit this bill? or am I going to be better off in another craft if this is my preferred way to turn a profit?

You have 2 choices when it comes to make and money. You can pick one, or mix and match.

1) Make interims for other crafters.

Starting at level 20, you make paddings, cords, and threads which other crafters NEED. You can also make cloth better than jewelers make it for themselves, and occasional straps for weaponsmiths. If you buy low in bulk, and put these up for vendor sale, you can make your many sales/low profit.

2) Make finished goods.

Backpacks! Those were my big money maker for each tier, but I've been on the leading edge. Finished goods continue to sell, but obviously no one wants these in bulk. This is harder to make money at, but the profit margins can be larger.
